Cucumber celery lime juice with a clean savory edge
This original recipe is mostly high-water vegetables with enough peeled lime to brighten them. It makes about two small servings, with yield depending on produce and machine. There is no added sugar and no claim that celery has applied for work as medicine.
Ingredients
- 500 g cucumber
- 250 g celery stalks with leaves removed if wilted
- 50 g crisp green apple
- 30 g lime flesh, colored peel and visible seeds removed
- 1 g finely ground black pepper, optional, added after juicing
Use fresh sound produce. Do not substitute bottled lime product without checking its label and adjusting the recipe separately.
Wash and trim
Wash hands for at least 20 seconds. Rinse the whole cucumber, celery, apple, and lime under running water without soap, detergent, or produce wash. Scrub the cucumber with a clean produce brush and dry everything.
Cut away damaged areas. Trim celery root ends and separate stalks so hidden dirt can rinse away. Peel the lime after washing and remove visible seeds. Remove the apple stem and any hard parts excluded by the appliance manual.

Feed for steady extraction
Assemble the clean machine. Alternate celery with cucumber and apple so long fibers do not enter as one rope. Add lime flesh between cucumber pieces. Use only the approved pusher and let the juicer clear each piece before adding the next.
If celery fibers wrap around components or pulp output slows, turn off and unplug the machine before following the manual's clearing procedure.
Mix and adjust
Stir the finished batch thoroughly. Taste 30 ml before seasoning. If celery dominates, add cold potable water 15 ml at a time to each glass or increase cucumber in the next batch. If it tastes flat, add 5 g more peeled lime flesh in the next run rather than pressing bitter rind into this one.

Add optional black pepper only after juicing, using a clean spoon. It will settle, so stir before each pour.
Manage texture without forcing the machine
Cucumber and celery can produce a foamy, pulpy top layer. Stir first, then let the juice rest briefly under refrigeration. Skim foam with a clean spoon or pass the drink through a clean fine-mesh sieve if a clearer texture matters to you. Straining changes mouthfeel; it does not pasteurize the juice or make questionable produce safe.
If yield suddenly drops during the run, pause rather than packing the chute harder. Check the pulp outlet and screen only after switching off and unplugging the appliance. A clean screen and patient feeding are useful; arm wrestling the pusher is not a technique.
Serve cold and promptly
Divide into two small servings according to actual yield. Serve immediately or refrigerate briefly in a clean covered container at 40°F (4°C) or below. Fresh homemade juice remains untreated.

Clean and record
